Bondiola salami
The "bondiola" from Poggio Renatico is a pork sausage, flavoured with various spices.
It is cooked with a very special recipe: it boils for 4 hours in a cloth bag, and it is anchored to a wooden device, so it never touches the pot. It is served in slices, with mashed potatoes.
