Torta Tenerina is a traditional dessert from Ferrara. It is very flat and it has a creamy heart: a dream for chocolate lovers.

Famous since the beginning of 1900 as Torta Montenegrina or Torta Regina del Montenegro, it has been created for Elena Petrovich, queen of Montenegro, wife of Vittorio Emanuele II the King of Italy. In Ferrara, we used to call it "torta tacolenta" (sticky pie) because of its thickness and gooeyness.
With a thin, crunchy outer layer and decorated with icing sugar, Tenerina reveals its soft center once cut: an irresistible combination that makes it one of the most beloved specialities of Ferrara.

The recipe has no yeast, very little flour and a lot of dark chocolate, which is what makes it so flat, moist and silky.
