In Ferrara's cuisine garlic is a certain ingredient: it brings out the flavours of fish, meat and vegetable based dishes and it represents an essential element in the preparation of traditional cured meats, such as salame and pancetta.
Amongst the most renowned varieties there is the Voghiera Garlic PDO, which gained the Protected Designation of Origin thanks to its extraordinary quality and to its bond with Ferrara's territory.

Voghiera DOP garlic is sweet and delicate and lends itself to many culinary uses. Recently, several companies have started producing products based on Voghiera PDO garlic: from the classic Ferrara salami with garlic to variuos patés and even 'Nero di Voghiera' black garlic, naturally fermented in a controlled temperature and humidity environment.
