Tartufo

The Ferrara area hosts many varieties of truffle, making the area a real paradise for the lovers of this valuable mushroom.

The alluvial soils and the presence of the right kind of trees make the Alto Ferrarese excellent for producing truffles, especially the area of Bondeno, which is one of the nation's leading white truffle (Tuber Magnatum) producers.

Black truffle (Tuber Macrosporum) is less expensive but equally appreciated in the kitchen, with a slight garlic scent and an intense flavour.

These truffles can be found in the woods and near the Po river, where they find the perfect ecosystem to grow and develop. Sometimes they can be found in public and private parks, especially where linden trees grow.

Near Mesola the bianchetto or tartufo di pineta (Tuber Albidum) can be found, smaller but fragrant and with a delicate flavour, very appreciated in the kitchen.

Other interesting varieties are the black winter truffle (Tuber Brumale), which grows at the end of winter, and the summer truffle (Tuber Aestivum), picked from September to January.

Ferrarese truffles, thanks to their varieties and quality, represent a must-see destination for those who love good food and the land's products.
