
"Curly pie" or "Tagliatelle pie"
"Curly pie" or "Tagliatelle pie" is one of the most iconic desserts of Emilia's tradition.
The "curly pie" mixes a unique look to a rich flavour. It is made with a sweet crust, almond and honey filling and is topped with fresh, thin tagliatelle. When it bakes, the pasta becomes crunchy and the texture of the pie is one of a kind. Traditionally, an almond liquor is poured on top of the pie, enhancing the scent and flavour.
A bit of history
Torta di Tagliatelle is deeply rooted to Emilia's food culture. It is common in the towns of the Appennine area between Tuscany and Emilia-Romagna, in the area around Ferrara and the province of Mantova. It is an ancient recipe that dates back to the Renaissance period. The thin tagliatelle on top of the pie are traditionally a reference to Lucrezia Borgia's blond hair, lady of the Este Castle of Ferrara for almost 20 years.
