Bondiola

The traditional cooked sausage

The "bondiola" from Poggio Renatico is a pork sausage, flavoured with various spices. As opposed to other cold cut hams, the bondiola is not aged, but rather cooked slowly, a method that brings out its flavour and consistency.

It is cooked with a very special traditional recipe: it boils for at least 4 hours in a cloth bag, and it is anchored to a wooden device, so it never touches the pot. As a result, the meat becomes soft and mild flavoured.

It is served in slices with mashed potatoes, perfect for those who want to taste the authentic flavours of local cuisine.
