Ingredients (for 6 people)
5 big peaches, 2 egg yolks, 70 g brown sugar, 120 g flour, 70 g butter, 1 teaspoon fruit liquor, ½ glass milk, 1 small bag of yeast for desserts, 100 g sugar, 1 tablespoon cinnamon, peel of 1 lemon, salt.

Preparation
Soften the butter and whisk together with brown butter until airy and soft. Add the egg yolks, the liquor and the grated lemon peel. Add flour, yeast, a pinch of salt, milk and mix until well combined. Peel the peaches and slice them up; place them nicely at the bottom of a buttered pan and sprinkle them with sugar and cinnamon. Pour the batter over the peaches and bake at 170°C for about 40 minutes.

Serve warm or cold.
